Hash Brown Patty Tater Tot Casserole A little Midwest comfort food… with a shortcut. 😏 Instead of lining up a million tater tots (because apparently I make them march in perfect little rows 😂), I use frozen hash brown patties. Same crispy potato goodness, way less work. Ingredients * 2 pounds ground beef * Salt and pepper, to taste * Dehydrated minced onion, to taste * Dehydrated minced garlic, to taste * 1 can Fiesta corn, drained (optional… but highly recommended!) * 10 ounces shredded Colby Jack cheese (about 2–2½ cups) * 9 frozen hash brown patties (about 1 package) Cream Soup Option 1 * 2 cans condensed cream of chicken soup Cream Soup Option 2 * Homemade condensed cream of chicken soup (recipe below) Note: If you’re making my homemade version, you’ll also need the dry soup mix recipe at the end of this post. To Make the Homemade Condensed Cream of Chicken Soup * 6 tablespoons butter * ⅔ cup homemade cream soup dry mix * 2 cups milk 1. Melt the butter over medium heat. 2. Whisk in the dry mix until it forms a thick, crumbly paste. 3. Slowly whisk in the milk, whisking constantly. 4. Bring to a high simmer while continuing to whisk. 5. Once thickened, remove from the heat. Important: This recipe makes the condensed version of cream of chicken soup—the same consistency you’d get from the can. Yes, it’s supposed to be thick! If you’re wanting a bowl of cream of chicken soup instead, simply whisk in additional milk or broth until it reaches the consistency you prefer. Directions 1. Preheat your oven to 400°F. 2. Brown the ground beef and season with salt, pepper, dehydrated onion, and dehydrated garlic. 3. Stir in the drained Fiesta corn. 4. Mix the beef with either: * 2 cans condensed cream of chicken soup, or * the homemade condensed cream of chicken soup above. 5. Spread the mixture into a 9×13-inch baking dish. 6. Sprinkle the Colby Jack cheese evenly over the top. 7. Arrange the hash brown patties in a single layer over the cheese. 8. Bake for about 35 minutes, or until the casserole is hot, bubbly, and the hash browns are golden brown and crispy. ⸻ Homemade Cream of Chicken Soup Dry Mix Ingredients * 2 cups nonfat dry milk powder * ¾ cup cornstarch * ¼ cup chicken bouillon powder (I actually use closer to ⅓ cup now—it gives it a richer flavor.) * 2 tablespoons dried minced onion * 2 teaspoons Italian seasoning * 1 teaspoon garlic powder * ½ teaspoon black pepper Whisk everything together and store in an airtight container. To Replace 2 Cans of Condensed Cream of Chicken Soup * 6 tablespoons butter * ⅔ cup dry mix * 2 cups milk 1. Melt the butter over medium heat. 2. Whisk in the dry mix until it forms a thick, crumbly paste. 3. Slowly whisk in the milk, whisking constantly. 4. Bring to a high simmer while continuing to whisk until thickened. 5. Remove from the heat and use in place of 2 cans of condensed cream of chicken soup. Again, this recipe makes the condensed version, just like the cans from the grocery store.
