Creamy Parmesan Chicken & Veggie Pasta Ingredients: • 1 stick (½ cup) unsalted butter • 1–1.5 lbs chicken thighs (boneless, skinless) • 2–3 tsp your favorite all-purpose seasoning (such as Italian or Cajun) • 2 cups broccoli florets • 1 medium onion, thinly sliced • 1 red bell pepper, thinly sliced • 1 cup mushrooms, sliced • 2 cups heavy cream • 1 cup grated Parmesan cheese • 12 oz pasta of choice (penne, fettuccine, or rotini work well) • Salt & pepper, to taste • Optional: fresh parsley for garnish Instructions: 1. Prepare Pasta: Cook pasta according to package instructions. Drain and set aside. 2. Cook Chicken: In a large pan over medium heat, melt the stick of butter. Add the chicken thighs, season both sides with your favorite seasoning, and cook for 8–10 minutes per side, until golden and cooked through. Remove chicken from the pan, chop into bite-sized cubes, and set aside. 3. Sauté Vegetables: To the same pan (with leftover buttery bits), add broccoli florets. Sauté for 5–6 minutes until they start to soften. Add onion and red bell pepper, season with a little more seasoning, and cook for another 3–5 minutes. Stir in mushrooms and cook for another 2–3 minutes, until all veggies are tender. 4. Make Sauce: Pour in the heavy cream, then sprinkle in the grated Parmesan. Stir well, scraping the pan to get all the flavors mixed in. Cook, stirring often, until the cheese has melted and sauce thickens slightly. 5. Combine & Serve: Add cooked pasta and chicken pieces to the pan with the sauce and veggies. Mix everything thoroughly to coat and combine.
