Creamy Lemon Chicken Orzo Ingredients: • 2 tablespoons olive oil • 1 pound chicken breast, cut into small cubes • Your favorite seasoning (for example: Italian blend, or any seasoning you love) • 2 tablespoons black pepper (adjust to taste) • 1 onion, diced • 1 cup sun-dried tomatoes, chopped • 1 tablespoon minced garlic • 3 cups orzo pasta (uncooked) • 3 cups chicken broth • 2 whole lemons, juiced • 4 tablespoons fresh basil, chopped • 2 handfuls baby spinach • 1½ cups heavy cream • 1 cup grated Parmesan cheese Instructions: 1. Warm a large pan over medium heat and add the olive oil. 2. Add the cubed chicken breast to the pan. Season with your favorite blend and the black pepper. Mix well and cook until the chicken is browned and cooked through. 3. Add the diced onion to the chicken. Stir and cook for about 3 minutes until the onion begins to soften. 4. Stir in the sun-dried tomatoes and cook for another 3 minutes. 5. Add the minced garlic, give it a quick mix, and cook until fragrant (about 30 seconds). 6. Pour in the orzo and chicken broth. Stir to combine, then squeeze in the juice from both lemons and mix again. 7. Sprinkle the fresh basil over the mixture, cover the pan, and let it cook for 10 minutes. 8. Uncover and give everything a good mix. Add the baby spinach, cover, and cook for another 5 minutes. 9. Mix everything well, then pour in the heavy cream and stir to combine. 10.
