I've been wanting to do a corn theme for a while and I'm so happy with how it turned out! This week I had some friends over for a corn themed dinner party and I made brown butter and sage corn ravioli, corn bread with honey, corn salad with skirt steak, and sweet corn ice cream for dessert. I got started making my pasta dough using different amounts of turmeric to make different shades of yellow and then I made a white pasta dough with just egg whites and yogurt. I thinned out my pasta dough using a pasta roller one more time and then cut out different stripes in different sizes. I then started creating the yellow lattice pattern. I trimmed up the sides and then thinned out my pasta dough one more time before making my ravioli filling. I grated some parmesan reggiano, salt and pepper and then mixed it all together. I then used a ravioli maker to cut out the ravioli. I piped on the filling and sealed everything together with a little water. I then cut out the ravioli. I put butter in a corn mold and then got working on my cornbread. I added cornmeal, sugar, baking powder, salt, milk, and egg and then mixed everything together and poured that into the oven. I timed this perfectly to get it out right when guests were arriving. I marinated my skirt steak and then started roasting some corn. I made my elote sauce with butter, lime juice, salt and pepper and then mixed it all together. I then got working on my pasta sauce. I added corn, tomatoes, peaches, red onion, lime juice, salt and pepper and mixed it all together. I then added the skirt steak to the corn salad. I cooked the ravioli and then added some sage in with the brown butter corn sauce. I then added the ravioli to the sauce. I plated it up and then got working on the skirt steak. I roasted the corn and then added some cotija cheese and tajin. I then made my sweet corn ice cream. I blended some corn and then added milk, sugar, egg yolks, and vanilla and let it sit in the fridge overnight to get all the corn flavor. The next day I made the ice cream, let it sit in the freezer, plated it up and added some kettle corn on top for a little crunch. And here's the final product for our dinner. Amelia was dressed on theme of course. And the night before I started working on the sweet corn ice cream. I made the corn ice cream custard base and then let it sit in the fridge overnight to get all the corn flavor. The next day I made the ice cream, let it sit in the freezer, plated it up and added some kettle corn on top for a little crunch. And here's the final product for our dinner.
