I bought an adorable Pattypan squash at the French village market last Wednesday and I’ve been cogitating how I wanted to cook it. It’s soft when cooked so I needed something with texture and bite and I chose Puy lentils for their nuttiness. I added onions, a whole head of roasted garlic, peppers, carrots, chili peppers, sun dried tomatoes and wow what an explosion of textures and flavours! A perfect summer produce vegetarian meal.
