Zucchini Pie! I'm hopping on the zucchini pie trend and making one today. Everyone's at the beach, I got the kitchen to myself. Let's do it. We're gonna make a zucchini pie. So I got my zucchinis from my garden and I'm gonna grate it up. We want three cups of shredded zucchini. So I'm just gonna pack it in here, measuring it out. So I actually did four cups because the baking dish that I have down here is a little bigger than what I would normally use. So we want four cups of shredded zucchini. I have it here on a kitchen towel. I'm gonna wrap it up and go ring out all of the moisture. In the sink. Squeeze it out. As best as you can. Try and get as much water out as possible because zucchini is very watery and we don't want a watery pie. Next, we're gonna chop up a little bit of onion. About a half a cup of chopped onion. What is it about onions? Seriously. Gets me every time. Okay. In a nice large bowl, we're gonna crack four eggs and beat them. Gonna add some salt and pepper. We're gonna add in that chopped onion. About two tablespoons of fresh parsley, chopped. And then about half a cup of shredded mozzarella cheese. Next, we're adding a cup of baking mix, like Bisquick. But if you don't have that, you can use pancake mix. But Bisquick is the best. And to this, we add the zucchini. Now we're just gonna mix that up. Wait a minute. I forgot something. I have here a 9 by 13 inch baking dish that I've greased. You can use a pie dish, but this is what we have down here. And we have here, and we're gonna pour that in. Spread this out nice and even. We're gonna bake it in the oven. 350 degrees for about 45 minutes. Just came out of the oven. It was exactly 45 minutes. It looks great. That's it. Gonna let it cool. And then we'll try it. Mmm.
