Today I'm going to show you how to make the best zucchini bread. This truly is the best zucchini bread recipe that I've ever stumbled across before. I found it years ago, so I don't know whose recipe it is, but it's a good one. You're going to start by creaming together one cup of salted butter, room temperature, two cups of light brown sugar, packed. Cream these together for about two to three minutes until it's nice and fluffy. Now we're going to add four room temperature eggs. You're going to add one at a time and whisk in between until they're all fully incorporated. Two cups of crushed pineapple, no need to drain it. Add that to a bowl. It's basically a 20 ounce can of crushed pineapple. Two cups of grated zucchini. I'm going to mix it up. Two teaspoons of vanilla extract. Go ahead and give everything a good whisk until well combined. We're going to set this aside. Four cups of unbleached all-purpose flour. Teaspoon of salt. Two teaspoons of baking soda. Teaspoon of cinnamon. Whisk your dry ingredients together. I'm going to add that to the wet ingredients. I'm going to add my dry ingredients to my wet ingredients and fold until well combined. I should have mentioned this recipe makes two loaf pans. You can easily half this and just make one. I prefer an 8 and a half by four and a half inch bread loaf pan. I just think it makes a better, especially quick bread. Takes a little bit less time and the finished product is always better for me. A 9 by 5 will work fine. Split your batter in between both pans. These are buttered and lined with parchment paper. Having a thin strip of butter to each of the top of the loaves. I'm hoping that will give me that bakery style split. Now we're going to bake these in a preheated 350 degree Fahrenheit oven for 60 to 70 minutes until a toothpick inserted comes out mostly clean. I'll be back. Here's our finished product.
