Impossible Pies became one of those classic Bisquick ideas that made getting supper on the table just a little easier. Instead of making and rolling out a traditional pie crust, you put your filling into the pie plate and poured a simple Bisquick mixture over everything. As it baked, it formed its own crust around the filling. That little bit of kitchen magic is where the “Impossible” name came from. And of course, there were all kinds of versions over the years. Tonight I went with Impossible Cheeseburger Pie. Ground beef, onion, cheddar cheese and that simple Bisquick mixture poured right over the top. Nothing fancy and nothing complicated. Just the kind of hearty family supper that feels right at home in the 1980s.
