Welcome back to my healthy food prep series where every week I share a new menu, a five-day recipe and a grocery list to go with it. If you want the recipes and the grocery list, make sure to comment recipes below. Starting off the prep with a lemon olive oil cake. I've been craving something light and fresh, a snack I can have all week long, so I figured this would be a really delicious option. While that was baking in the oven, I got started on a triple chocolate brownie bark. This is vegan, gluten-free, and protein packed. Another really great snack that I like to have on hand. This is more for like after dinner when I'm craving something before bed. The fact that this genuinely tastes like box brownie mix, but was made with nourishing ingredients is just insane. I don't know about you, but I crave a savory breakfast. This week I wanted something that was grab and go, that was protein and veggie packed. So I'm making a goat cheese and veggie frittata. I'm always being asked for inspiration for my recipes and usually it's something my dad has made before. I've always loved when he makes us frittatas at home, so this one is inspired by him. When planning my preps, I'm very intentional about how you'll move through the week. You'll get a lot of the oven recipes out of the way early. That way, while those are cooking, you can get started on the no-cook recipes. This kale and goat cheese white bean salad comes together in a bright lemon vinaigrette. It sits in the fridge and marinates overnight, so it just tastes better throughout the week. I stuck some lentils in here too to really up the fiber. By now, the loaf was ready to be iced and sliced. I had to give you a texture check. Look at this cross section. Moment of silence. My jaw was on the floor. The crumb is just perfect. I absolutely cannot wait to eat this all week long. I'm going to crumble it onto your breakfast. By this point, the brownie bark was set and ready to be broken into these delicious gorgeous pieces. I don't know about you, but that handful right there is my dream. Speaking of gorgeous pieces, that is the perfect segue to the frittata. Look at this gorgeous piece. This could not have turned out more perfect. I'm so excited to have this for breakfast every day this week. Of course, we always batch prep a protein source. This week I made these garlic herb mini burgers. I plan to serve these with the kale and goat cheese white bean salad, but I also just love snacking on these when I need some protein.
