I gave into the chocolate chip cookie overnight oat craze. These are even banana chip overnight oats. They are protein and fiber packed, made with nourishing ingredients and they have a little whimsy to start your day. So what's not to love? And if you're wondering yes, ingredients cake are what give these a cake like texture, so they are the real deal. I recently was asked what my favorite on the go snacks are and honestly, they're the ones I make myself. These are my healthy protein chocolate chip banana bread muffins. Once I popped those in the oven, I got started on my first savory recipe of the prep. I love pasta salad in the summer, but I wanted to change this up this week and made a loaded steak orzo salad instead. I might have to stick with this one for a while. It is absolutely addicting. Rough chopping the veggies here. Something about the big cuts of veggies with the small pasta just feels the steak turned out so perfect, nice and juicy, perfectly cooked and so well marinated. My recipes are designed to sit in the fridge and only get better with time over the course of the week. And that's exactly what will happen to this. I'm so excited to enjoy it all week long. I couldn't be more excited about dinner this week. It's an herby Greek chicken and potato sheet pan. This chicken gets marinated in this herby Greek yogurt dressing. The first time I made chicken myself and it could not have turned out better. Extremely proud of this one. By this point the muffins were cooled. I always give you a texture check on the muffins I make and it's never disappoints. These are always so perfectly fluffy. One of my favorite healthy snack duos is fresh veggies and hummus. I made my own hummus this week and it's a whipped feta and roasted red pepper version. It is so smooth, packed with protein and fiber, delicious. The only thing left was the sheet pan. This came out so crispy and caramelized from being under the broiler and the chicken is nice and juicy. All the flavors just meld together in a gorgeous way. I'm so excited to eat this all week long. My favorite menu yet. There's a little whimsy and a whole lot of flavor. I hope you love it as much as I do.
