Today's my birthday. Let's make my birthday meal. Some cheesy chicken enchiladas. I'm gonna use two packs of the chicken and just cube them up for a little more protein. Just keep them up. Dice them up. Dice them up. However you want to cut them up. You can honestly shred this and it'd work the same, but my mom always cubed it up, so I got to cube it up. Have your chicken cut up. You're gonna do about a fourth of a cup of your favorite taco sauce. And season with Kinder's salt, pepper, garlic powder. And then season with some taco seasoning. Get this cooked up on your stovetop. We're gonna drain one can of black beans, one can of corn, and one can of Rotel. You're gonna add all of this into your chicken on the stovetop. Now for the real, real good part. You're gonna add a whole block of cream cheese into this. Make sure and let it melt. When your cream cheese is all melted, you have this nice creamy filling. Let's grab our tortillas and get them in the oven. These are 9-inch tortillas. Spray your 9 by 13 pan. This is where you get a little mist. I leave the ends open. And you're gonna use until all your tortillas are gone or all your mixture is gone. Then you're gonna put it in your pan. About seven. I like to top mine with a little cheese. We're gonna put this in a 350 degree oven for about 15 to 20 minutes or until your cheese is nice and melty. Everyone's plates are empty, so I'd say it was pretty good.
