This meal I can eat every day for lunch and never get sick of it. 45 grams of protein per bowl. Perfectly cooked rice, individually portioned meals, ready to grab and go. These are my salsa chicken bakes. Let's prep them. I preheated the oven to 350 degrees. I'm adding two tablespoons of uncooked white rice to each bowl. I'm telling you, it ends up feeling like plenty, but if you want to bulk this up even more, you can double the rice. You can add some cauliflower rice. Each bowl is getting 5 ounces of boneless, skinless chicken breast. I season them with a little salt and pepper. And then I warmed up some cream cheese. And then I topped each one with some salsa. Again, use whatever salsa you like. And last, I'm topping each one with one ounce of reduced-fat Mexican cheese blend. These go in the oven for 40 minutes uncovered. When you take them out of the oven, they should look like this. Not like this. If that's the case, put them back in for another 10 minutes. I let them cool for just a few minutes, cover them with the lids, and these go in the fridge to enjoy for lunch the rest of the week.
