This is what I like to make when I want to eat lots of veggies and I still want it to taste delicious. You can use any leafy greens that you like. Today we're using tong hao, but I also used spinach as well as bok choy, and they both taste amazing. Blanche the veggie for 1 to 2 minutes and squeeze out all the excess water. And chop it into very small pieces. Now season the veggie with sesame oil, roasted sesame seeds, and mix everything together. To add even more fiber, I also chopped up a bunch of shiitake mushrooms. Sauté for 2 to 3 minutes with just soy sauce and black pepper until softened. Now all you need is hot rice, a generous amount of furikake seasoning, and finally add in your veggies. Mix, mix, mix. Now look at that!!
