The best coffee cake ever ! ( wait till you see what I did with the walnuts!) Easy coffee cake that actually tastes like coffee with maple toasted walnuts on the top. Delicious. So soft and absolutely delicious. This coffee cake is super moist and has a little ingredient that you might not think of but just raises the level of it. I've got 8 ounces of butter and I'm gonna pop it into a bowl along with 8 ounces of soft brown sugar on top of it. Beat that on high speed for about 5 minutes until it's nice and light in colour and a bit fluffy. While that's beating, I'm gonna dissolve two heaped teaspoons of instant coffee in two tablespoons of just boiled water. And half a teaspoon of cocoa powder. You won't taste that but it lifts the coffee flavor. Stir it well till it dissolves and set that to the side until we're ready for it. Once you've got it all beaten up, add one ounce of self-raising flour to it. And four large eggs, one at a time until they're fully combined. Once your eggs are all added, add seven more ounces of self-raising flour and a teaspoon of baking powder along with your dissolved coffee mixture. And two tablespoons of milk. Mix that on slow speed until it's fully combined but do not overbeat. Divide your mixture between two 8-inch buttered and floured baking tins. Spread and pop these into the center of a preheated 160 fan, 180 degrees Celsius oven for about 22 to 27 minutes depending on your oven. They're ready when they spring back to touch and a skewer put into the middle comes out nice and clean. Now we're going to make the butter cream. Get about a tablespoon and a half of your instant coffee. Mix it with a tablespoon and a half of boiling water. Combine and set that to the side until we're ready for it again. Beat 5 ounces of butter until it's nice and light and creamy. Add 10 ounces of icing or powdered sugar to the butter. And a teaspoon of vanilla. And a pinch of salt along with your dissolved coffee mixture. And beat that all for a few minutes until it's really nice and creamy. That's your butter cream already. Once your cake is out of the oven and completely cooled, we will sandwich together the cakes in the middle with some butter cream and some of the butter cream on the top. I'm gonna toast walnuts with a bit of maple syrup on them to decorate. I just chopped up a few walnuts, pop them in under the grill for a couple of minutes. Now a little bit of maple syrup. Give that a little stir, stick under the grill again for about one minute. That's your maple toasted walnuts. They'll be absolutely delicious on top of the cake. This no-feel coffee cake is honestly, to goodness, the nicest one you will ever have. Sandwich together your layers and then frost the cake. Then I'm gonna toast walnuts with a bit of maple syrup on them to decorate. I just chopped up a few walnuts, pop them in under the grill for a couple of minutes. Now a little bit of maple syrup. Give that a little stir, stick under the grill again for about one minute. That's your maple toasted walnuts. They'll be absolutely delicious on top of the cake.
