This is what family dinner at home looks like when your toddler loves pickles. I'm always trying to lean into the foods that Ruby like while still making them something the whole family will enjoy. One of my favorite things to make is my chicken skewers. I thought, what if I pickle-ified them? The chicken gets marinated in pickle juice, then breaded in the quickest way possible. I like to grill mine, but you could also cook these in the oven or even in the air fryer. This is one of those recipes where a lot of it can be made in advance, which is something I'm all about these days as a busy mom. I served these up with parmesan and lemon herb pearl couscous. That was just perfection. I also made a little creamy dill pickle ranch to go on top. This is one of those recipes that we all really loved.
