This is everything I fed my family of 3 and first time mom I fed my family of 3 and a week for dinner I am a full time content creator and food blogger I am also a full time mom to a 16 month old I am very busy, I wear a lot of different hats One thing's for sure, I'm gonna have dinner on the table every single night for my family Trust me, I know how chaotic dinnertime can be Whether that's deciding what to eat, chasing around a toddler, maybe you get the dreaded, I'm gonna be home late from work text You've been there, don't worry, so have I And I'm here to provide you with a week of dinners that are all easy, all healthy, some come together in one pot, some made on a sheet pan And they're all full of so much flavor And they're all family-friendly, so your toddler and children will also like them So let's get into it Sunday night I made an unstuffed bell pepper casserole It's literally so much easier than stuffed bell peppers It comes together in one pan, basically no cleanup And you can adjust the spice level for younger kids who might be eating this dinner Monday night I made high protein mac and cheese Honestly, Mondays are always tough for me and I wanted something that was high protein but still comforting Something that I could add veggies into And let's be honest, I wanted something that my toddler would for sure eat and love High protein mac and cheese with broccoli was the Let me tell you what my toddler had two servings of this And also ate it every single day for lunch since then And I feel like that is everything you need to know about that mac and cheese Tuesday night I was solo parenting so I ran to my parents house for dinner Sister cooked a dinner and she made hot honey salmon If you're feeding toddlers or children this dinner, I would just adjust by not putting any of the hot honey sauce on some pieces of salmon, leaving off the spicy sriracha mayo That way you don't have to do anything extra for them Wednesday night I was solo parenting and dinner And I made a sheet pan dinner I like to prep this dinner during my son's second nap That way when dinner rolls around, it's time to eat, all I have to do is stick one sheet pan in the oven There's no excuses for eating takeout dinner It's super simple to make I cooked my potatoes alone for about 20 minutes, then I added on my salmon and broccoli and cooked that for about 20 more minutes Then I paired it with a little creamy Dijon sauce Super simple, no cleanup, and honestly exactly what we needed to end the week Recipe is on my substack Or you can just search Mersgoodeats on substack Either way, I hope you enjoyed this week of dinners and I will see you back next week for another week of dinners Thursday night I made my husband's favorite dinner of the week, which was a creamy Tuscan chicken dish I made it healthier by not adding any heavy cream I also cooked some brown rice on the side This dish was full of so much flavor and is honestly exactly what we needed to end the week Recipe is on my substack Or you can just search Mersgoodeats on substack Either way, I hope you enjoyed this week of dinners and I will see you back next week for another week of dinners
