Tender beef, fragrant garlic and ginger, and a rich soy-based sauce—perfectly served over rice. Ingredients (Serves 4) For the Beef: • 1.5 lbs chuck eye steak, sliced into bite-size pieces • ½ cup potato starch For the Sauce: • 2/3 cup soy sauce (low sodium) • 1/2 cup brown sugar • 1/4 cup water • 1 tbsp oyster sauce For the Stir-Fry: • 3 tbsp sesame oil • 4 cloves garlic, minced • 1 tsp ginger, minced • 4 green onions, cut into 2-inch pieces (white and green parts divided) For Serving: • Cooked rice Instructions 1. Prepare the Sauce: In a bowl, mix soy sauce, brown sugar, water, and oyster sauce. Set aside. 2. Cook the Beef: Coat the beef slices with potato starch. Heat 2 tbsp sesame oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides. Transfer the beef to a plate and set aside. 3. Sauté Aromatics: In the same skillet, add 1 tbsp sesame oil. Sauté the garlic, ginger, and white parts of the green onions until fragrant, about 1-2 minutes. 4. Add the Sauce: Pour the prepared sauce into the skillet and bring it to a simmer. Let it cook for 2-3 minutes to thicken slightly. 5. Combine: Return the cooked beef to the skillet.
