Last week, we had some friends over at our house ❤️ And since it was also my husband’s birthday, we celebrated his 46th birthday too 🎉 Everyone came over around 5:30 PM, and somehow we ended up hanging out until midnight 🔥 We had so much fun! For the daegu-jeon (Korean cod fritters), since I was making a lot, I mixed the eggs with a little flour and dipped all the pollock pieces in the mixture at once. So much easier! 👍🏻 For the waterless bossam (Korean boiled pork), I scored the fatty side of the pork belly and generously seasoned the whole piece with cooking wine and salt. I added a little oil to a heavy pot and wiped it out with a paper towel. Then I added a generous amount of sliced onions and placed the whole pork belly right on top. Cook over medium-low heat for 30 minutes, flip it, and cook for another 30 minutes — 1 hour total! I didn’t add a single drop of water, but after an hour, there was actually so much liquid in the pot from the pork and onions! Take the pork out, leaving a little bit of onion in the pot. Add cooking wine and let the onions caramelize. Then put the pork back in and turn it around in the caramelized onions until it’s nicely browned and coated. And that’s it! 👍🏻 So easy and SO good! ❤️
