Roast a pierced sweet potato at 200°C for approx 60 mins until completely soft. Scoop out 400g flesh and mash until smooth (or blend for an ultra-smooth batter). Pro Tip: Chill the sweet potato purée overnight (or for at least 30 minutes) before mixing. This reduces moisture, meaning you’ll need less flour and end up with a softer, lighter dough. 2. Preheat oven to 180°C. Melt butter on medium-low heat, stirring frequently until it starts to brown and develop a warm, nutty aroma. Start with around 120g butter and you should be left with around 90g butter if you want to be precise. Use a spoon to scoop out as many of the brown flecks as they are full of flavour. 3. To a large bowl, add all the ingredients and stir to combine. 4. Pour the mixture into a lined baking tin and bake for 20-35 mins depending on how fudgy you want them, check them every 5 minutes from 20 minutes to avoid overbaking them.
