Healthy Sweet Potato Cheesecake You won’t believe what you can make with a sweet potato 🍠 Get my Sweet Potato Cookbook at the link in my bio 📖 💪Testosterone/Hormone Nutrients: Choline, Selenium, Zinc, Cholesterol, Vitamins A, D & E, Healthy Fats, Luteinising Hormone Support ⚡Energy Nutrients: B Vitamins, Potassium, Calcium, Phosphorus, Vitamin C, Vitamin B6, Manganese, Protein, Complex Carbohydrates, Antioxidants INGREDIENTS: 1 Large Sweet Potato (400g cooked purée) 4 Large Eggs 100g Raw Honey 250g Cream Cheese (grass-fed, organic) 1 Tbsp Vanilla Extract Sea Salt (to taste) Optional Toppings: 1–2 Tbsp Raw Honey 1–2 Tbsp Bee Pollen METHOD: 1. Roast a pierced sweet potato at 200°C for 45–60 mins until completely soft. Scoop out 400g flesh and mash until smooth (or blend for an ultra-smooth batter). 2. Preheat oven to 150°C Fan / 170°C Conventional / 340°F. Line and lightly butter a 7x7” cake tin. 3. Whisk together the sweet potato purée, eggs, cream cheese, raw honey, vanilla and sea salt until thick and completely smooth. 4. Pour into the tin and bake for 50–60 mins until the edges are set but the centre still has a slight wobble. 5. Turn the oven off and leave the cheesecake inside with the door slightly open until cooled to room temperature. This helps minimise cracking and creates a creamier texture. 6. Chill for at least 6 hours, preferably overnight. Drizzle with raw honey, sprinkle with bee pollen (optional), slice and enjoy! Follow for more banging healthy recipes 🔥
