Roast a pierced sweet potato at 200°C for approx 60 mins until completely soft. Scoop out 260g flesh and mash until smooth (or blend for an ultra-smooth dough). Pro Tip: Chill the sweet potato purée overnight (or for at least 30 minutes) before mixing. This reduces moisture, meaning you’ll need less flour and end up with a softer, lighter dough. 2. Mix the sweet potato, egg and maple syrup until combined. Add the sea salt and baking powder, then gradually mix in the flour until a soft, mouldable dough forms. Add more flour 1 tbsp at a time if needed. Rest for 5–10 mins. 3. Divide into 8 equal portions and shape into donuts, making and widening a hole through the centre. 4. Heat 1-2 tbsp ghee over medium-low heat. It’s ready when a small piece of dough gently sizzles without burning. 5. Shallow fry for 3–5 mins per side, until golden brown and crisp. 6.
