One of my biggest pet peeves is when a recipe says it'll take 20 minutes and it actually takes about an hour. I find it very annoying, especially when you're doing a mid-week dinner and you just want something quick and easy. This will actually only take you 20 minutes. These are my cherry tomato and harissa butterbeans. You're going to start by cooking off your cherry tomatoes with a pinch of salt. Cook them off 'til they're lovely and soft and then add in your garlic. And after a minute or two, add in your harissa paste and give that a really good mix. You're going to add in your jar of butterbeans. Do not drain the liquid. This is going to help make your sauce lovely and thick and delicious. Squeeze of lemon, some fresh parsley, give it a stir. Let it simmer for a couple of minutes. I like to add some nutritional yeast, completely optional, but a little splash of soy cream just because I had some in my fridge. Season to taste and you're ready to go.

One of my faves after a long day at work, I usually serve it up with some sourdough but we only had bagels in which did the trick :) . Ingredients, as always pretty rough I don’t measure things that precisely (serves 2): - 250g (roughly, doesn’t have to be exact) punnet of on the vine cherry toms, halved - 2 garlic cloves, finely chopped - 1 tbsp harissa paste (the rose harissa from @BELAZU (Bel-uh-zoo) is by far the best!) - Jar of butterbeans (I use @Bold Bean Co always!) - don’t drain the liquid this is essential for the sauce! If you can’t get your hands on good quality beans you can drain them and just add some water with the beans, it’ll probs just come out a bit thinner - Handful of fresh chopped parsley - Juice of 1/2 a lemon - 1-2 tbsp nutritional yeast - Optional splash of vegan cream .
