This sausage & chorizo pasta is honestly one of the best pastas I have made in a while! To make this for 2 people you will need: 4 good quality sausages, I used Asda chilli ones 200g pasta ½ red onion fined diced 80g chorizo diced 10 cherry tomatoes halved 1tsp lazy garlic 2tsp smoked paprika 1tsp basil 1 knorr vegetables stock pot 1tsp sundried tomato paste 1 tin chopped tomatoes 50g spinach 100ml single cream Bunch fresh parsley finely chopped 40g grated parmesan Pinch salt & pepper Remove the skins from the sausages and add to a pan with a drizzle of olive oil on a medium heat. Separate the sausage meat using a spatula and cook for 5 mins. Add in the onion and cook for another 5 mins. Add in the chorizo, tomatoes & garlic and cook for another 5 mins. Place the pasta on to boil as per the packet instructions. Add in the smoked paprika, basil, salt, pepper, stock pot, sundried tomato paste & chopped tomatoes and stir well. Bring to a simmer then add in a ladle of pasta water then drain off the rest of the pasta once cooked. Add the spinach, cream, fresh basil and parmesan stir well then add in the cooked pasta.
