ep 3 | MEAL 1… BABE ON A BUDGET: EXPRESS 🫰🏼🧚🏼♀️⏱️🤭 MEAL 1: MADRAS PANEER & BUTTERBEAN TRAYBAKE 🍴4 Portions | ⏰30 Minutes Store Cupboard Essentials: Minced Ginger & Garlic, Mango Chutney, Black Pepper, Chilli Flakes
Ingredients: - [ ] 1 Red Onion - [ ] 200g Paneer - [ ] 570g Butter Beans - [ ] 200g Chopped Tomatoes - [ ] 70g Madras Paste - [ ] 1tsp Minced Ginger & Garlic - [ ] 200ml Coconut Milk - [ ] 100g Tenderstem Broccoli - [ ] 1 x Microwaveable Rice - [ ] 3tbsp Yoghurt - [ ] 2tbsp Mango Chutney - [ ] 1tsp Black Pepper - [ ] 1tsp Chilli Flakes To Make… 🥘 Preheat your oven to 180 degrees (celcius) 🥘 Cut red onion into chunks & paneer into cubes. 🥘 Add to a baking dish along with the butter beans. I’m using @boldbean & drained around 1/2 of the stock but kept the rest in! 🥘 Chop broccoli into small chunks & add this too. 🥘 Add madras paste, minced ginger & garlic, chopped tomatoes & coconut milk and give everything a good mix Add a little more coconut milk if needs be to ensure everything is covered. 🥘 Cover with foil & pop it into the oven for 15 minutes. 🥘 Remove from the oven, remove the foil, give everything a good mix and pop back into the oven for another 10-15 minutes, ensuring your broccoli is cooked. 🥘 Once ready, stir through cooked microwavable rice. I went with basmati. 🥘 Serve with yoghurt, mango chutney, chilli flakes & black pepper. Enjoy !! XX STORAGE INSTRUCTIONS: 🫙 Allow leftovers to cool completely & store in an airtight container in the fridge - keep the mango chutney & yoghurt separately and add once thoroughly reheated. 🧊 If freezing, keep the rice separately & only freeze the butterbean & paneer mix. Allow it to cool completely before freezing. To reheat, either defrost in the fridge overnight & then reheat in the microwave / on the hob or microwave directly from frozen in short burst.
