POV: It’s 1971 and porcupine meatballs are for dinner. ❤️ I made these using a recipe from a 1971 Better Homes & Gardens recipe collection, but porcupine meatballs had already been around for decades by then. They became known as an economical meal during the Depression era, with uncooked rice mixed right into the ground beef to help stretch the meat. As everything simmers together, the rice cooks and pokes out of the meatballs, which is where the “porcupine” name comes from. 😂 And my favorite little piece of history from this one… this particular Better Homes & Gardens recipe collection was offered free with the purchase of Prell shampoo! 😂 Now THAT is the kind of random vintage fact I love finding.
