This was our first time trying lasagna soup, and it is worth the hype! I had this meal waiting at the table when my kids arrived home from school and all five of them cleaned their plates. Lasagna Soup Ingredients For the soup * Oil, for sautéing * 1 yellow onion, diced * Minced garlic, to taste * 2 pounds ground beef * 3 tablespoons tomato paste * 1 teaspoon onion powder * 1 teaspoon garlic powder * 1 teaspoon dried parsley * 1 teaspoon dried oregano * ½ teaspoon ground thyme * ¼ teaspoon red pepper flakes * Salt and black pepper, to taste * 15 ounces tomato sauce * 15 ounces petite diced tomatoes * 4 cups chicken broth * ½ teaspoon sugar * 1 cup water (add more as needed) * 3 cups bowtie pasta * Fresh basil, for garnish For the ricotta mixture * 2 cups ricotta cheese (1 container) * ½ teaspoon garlic powder * ½ teaspoon dried parsley * Salt, to taste * ½ cup grated Parmesan cheese * 1½ cups shredded mozzarella cheese Note: If you have Italian seasoning, you can add about 2 teaspoons of that as well I just didn’t have any Instructions 1. Heat a drizzle of oil in a large pot over medium heat. Add the diced onion and sauté until translucent. 2. Add the minced garlic and ground beef. Cook, breaking up the meat as it cooks, until the beef is mostly browned. 3. Add the tomato paste, onion powder, garlic powder, dried parsley, oregano, thyme, red pepper flakes, salt, and black pepper. Stir and cook for a minute or two. 4. Add the tomato sauce, petite diced tomatoes, and chicken broth. Stir to combine, then add the sugar. 5. Add the water and bowtie pasta. Bring the soup to a boil, then reduce the heat and simmer for 12 to 15 minutes, or until the pasta is tender, stirring occasionally. Add more water as needed if the soup becomes too thick. 6. While the soup cooks, combine the ricotta, garlic powder, dried parsley, salt, Parmesan, and mozzarella in a bowl. Mix until well combined. 7. Taste the soup and add salt if needed. 8.
