After being at the beach for a week, it was nice to have a home-cooked meal! This sheet pan chicken dish really hit the spot. Ingredients For the Chicken & Vegetables 2 pounds boneless, skinless chicken thighs 1 pound baby Dutch potatoes, diced 3 cups broccoli florets Lemon Garlic Marinade ⅓ cup olive oil 3 cloves garlic, minced Juice and zest of 1 lemon 1 tablespoon Dijon mustard 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon onion powder 1 teaspoon garlic powder ½ teaspoon paprika ½ teaspoon ground cumin ½ teaspoon dried thyme ½ teaspoon sugar Parmesan Yogurt Herb Sauce (Optional, but highly recommended) ½ cup Greek yogurt ½ cup sour cream ¼ cup finely grated Parmesan ¼ cup chopped fresh parsley 1 tablespoon lemon juice 1 teaspoon dried dill ¼ teaspoon salt ¼ teaspoon ground cumin ⅛ teaspoon black pepper Instructions Preheat oven to 425°F. Lightly grease or line a large sheet pan with parchment paper. Make the marinade by whisking together olive oil, garlic, lemon juice and zest, Dijon mustard, and all seasonings until well combined. Reserve about 3 tablespoons of the marinade for the vegetables. Add the chicken thighs to a bowl or zip-top bag and pour the remaining marinade over the chicken. Toss to coat and marinate for a minimum of 30 minutes or up to 4 hours. Add the diced potatoes to the sheet pan and drizzle with about 1½ tablespoons of the reserved marinade. Season with an additional sprinkle of salt and toss to coat. Spread into an even layer and roast for 15–20 minutes. Toss the broccoli with the remaining 1½ tablespoons marinade and season with an additional sprinkle of salt. Remove the sheet pan from the oven and add the chicken and broccoli. Return to the oven and bake for 20–25 minutes, or until the chicken reaches 165°F and the potatoes are fork tender. Broil for 2–3 minutes at the end for extra browning and crispy edges, if desired.
