I know it’s still summer but my kids started school this week so I’m sneaking in some cozy fall comfort meals! 🍁 This one was so good! One-Pot Chicken Pot Pie Pasta Ingredients 4 tablespoons butter 1 yellow onion, diced 4 celery stalks, diced 4 cloves garlic, minced 1 teaspoon garlic powder 1 teaspoon onion powder ½ teaspoon ground thyme ¼ teaspoon turmeric ¼ teaspoon black pepper 1 teaspoon chicken bouillon ¼ cup all-purpose flour 1½ cups uncooked orzo 3 cups chicken broth (I only had 2 cups, so I substituted 1 of the cups with water) 1 cup half-and-half ¼ cup grated Parmesan cheese 3 cups cooked chicken, diced 1 (12-ounce) bag frozen peas, carrots, and corn Salt, to taste Instructions 1. Melt the butter in a large stock pot over medium heat. Add the diced onion and celery and cook until the onion is translucent and the vegetables begin to soften. 2. Add the minced garlic, garlic powder, onion powder, thyme, turmeric, black pepper, and chicken bouillon. Stir and cook for 1–2 minutes, allowing the spices to bloom and the garlic to become fragrant. 3. Add the flour and stir well to combine. Cook for about 1 minute, stirring constantly, to cook out the raw flour taste. 4. Add the uncooked orzo and stir to coat. Pour in the chicken broth and mix well. 5. Bring to a gentle simmer and cook until the orzo is al dente, about 10–15 minutes. Stir occasionally to prevent the orzo from sticking. Start checking it around 10 minutes. 6. If the pasta is still too crunchy and the liquid has been absorbed, add additional water ¼ cup at a time. Stir and simmer for about 5 minutes before checking again. Continue until the orzo reaches your desired consistency. 7. Stir in the half-and-half and Parmesan cheese until well combined. 8. Add the cooked chicken and frozen vegetables. Stir well and allow everything to simmer for another 5–10 minutes, or until the vegetables are heated through and tender. 9. Taste and add additional salt as needed.
