For dinner, I made this Broccoli Cheddar Tortellini Soup. This one is so easy to throw together and it's a nice upgrade from plain old broccoli cheddar soup. Here's how to make it. Start by putting 24 ounces of chopped broccoli in your crockpot. A cup and a half of shredded carrots, 1 diced medium onion, and 6 minced garlic cloves to your slow cooker. Season with 2 tablespoons of Dash Garlic & Herb Seasoning Blend, 2 teaspoons of adobo all-purpose seasoning, and a pinch of nutmeg. Pour in 5 cups of chicken broth, then whisk 1/4 cup of cornstarch into 1 additional cup of chicken broth and stir it into the slow cooker. Cover and cook on High for 3-4 hours or Low for 4-5 hours, until the broccoli is tender. During the final 30 minutes, stir in 2 cups of heavy cream and one 18-ounce package of fresh refrigerated tortellini, making sure the tortellini is covered by the liquid. Turn the slow cooker to High if it was cooking on Low, replace the lid, and cook for about 30 minutes, or until the tortellini is tender. I got this chicken one by mistake and it was actually really good. Cook that for another 30 minutes or until the tortellini is tender. Add 2 cups of freshly shredded sharp cheddar, stirring gently until melted. Then add some salt and pepper to taste if needed. And that's all there is to it.
