Chocolate Peanut Butter Cheesecake Bars For the Oreo crust: * 24 Oreos, finely crushed * 1/4 cup (4 tablespoons) unsalted butter, melted For the peanut butter cheesecake filling: * 8 oz cream cheese, softened * 1/3 cup granulated sugar * 1 1/2 tablespoons sour cream * 1/3 cup creamy peanut butter * 1/2 teaspoon vanilla extract * Small pinch of salt * 1 large egg For the chocolate ganache: * 6 oz semi-sweet chocolate * 1/3 cup heavy cream * 1 tablespoon unsalted butter, softened * Chopped Reese’s Peanut Butter Cups for topping Directions Preheat oven to 325°F. Crush the Oreos until fine and mix with the melted butter. Press firmly into the bottom of a parchment-lined 8x8-inch pan. Bake for 8–10 minutes, then remove from the oven and let cool. Beat the softened cream cheese and sugar until smooth. Add the sour cream, peanut butter, vanilla and salt and mix until combined. Add the egg and mix on low just until incorporated. Don’t overmix. Spread the cheesecake filling evenly over the cooled Oreo crust. Bake at 325°F for about 30–40 minutes, or until the edges are set but the center still has a slight jiggle. Let cool at room temperature for at least 30 minutes, then refrigerate for at least 3 hours. For the ganache, combine the chocolate and heavy cream and microwave in 15-second intervals, stirring between each one, until smooth. Stir in the butter until melted and glossy. Let the ganache cool slightly, then spread it over the chilled cheesecake. Sprinkle chopped Reese’s Peanut Butter Cups over the top. Chill again until the chocolate topping is firm, then slice and enjoy.
