You asked me for this one SO many times, so here it is — the detailed version showing exactly how I made every step! 🍔🤎 For the dough: 350g bread flour 7g dry yeast 25g sugar 1 tsp salt 1 egg 150ml warm water 45g neutral oil 1 tsp honey (optional) Mix the flour, yeast & sugar. Add the egg, water & honey and knead for 3–4 min. Add the salt & oil and knead for another 7–8 min until soft and smooth. Cover and let rise for 45–60 min. For the burgers: I used ground beef with 20% fat. Finely chop an onion and cook until deeply golden. Let it cool, then add 2 tbsp to the beef along with 1 tsp salt, ½ tsp black pepper, and my little secret — a splash of sparkling water! Mix everything really well. Tip: the more you work the meat, the better the burgers will hold together. Shape into patties and quickly sear in a very hot pan. I wanted mine to stay medium even after baking, so I only did about 1 minute per side — but cook yours to your preferred doneness! Jalapeño Jam: 🌶️ Slice 7–8 jalapeños and add to a saucepan with ½ cup sugar, ¼ tsp salt, ¼ cup honey, 2 tbsp oil & ¼ cup water. Cook until thick and jammy, like you see in the video. For the sauce: Honestly, I change this sauce a little every time 😂 but this time I used: 2 tbsp mayo 1 tbsp sweet chili sauce 1 tbsp of the cooked onions 1 tsp rice vinegar 1 tsp sriracha ½ tsp mustard Mix well! To assemble: Roll out the dough, then layer your burger and toppings. I used the jalapeño jam, sauce, pickles, caramelized onion rings & cheese (I used vegan cheese). Wrap everything with the dough and seal well. For the caramelized onion rings, I simply sliced an onion into rings and cooked them with a little sugar and oil over low heat until deeply caramelized. Low heat + patience! 🧅 Let the wrapped burgers rise for 15–20 min, brush with egg wash, sprinkle with sesame seeds and bake at 375°F for 14–16 min, until golden.
