I can teach you how to make home-made syrups, but if your ratio is off, your coffee is still gonna suck. Here is the perfect ratio for an iced coffee. You're gonna start with your syrup. I can only speak to my syrups and the sweetness level of these. I know that other syrups are typically a bit sweeter but maybe a little less flavor. I start with 25 to 30 grams of syrup and then you brew your espresso shots over this. While those are brewing let's measure out our milk. Depending on how strong I want my coffee I'm gonna go anywhere from 90 grams to 110 grams of milk. This is 100 grams which is exactly half a cup. If you don't have a scale, measure half a cup. Somebody commented to put the smooth syrup in the coffee and the chunky syrup in the cold foam and it just seems genius to me. For my cold foam, I typically only do about 10 grams of syrup. Also in the cold foam is 1 tablespoon heavy cream. Espresso shots are done. I always froth my espresso shots and my syrup. Stir here or froth again. Pack this sucker to the brim with ice. Give it a stir, always. Ratio should get you this stunning, beautiful, gorgeous color. It's the perfect coffee-forward, not-so-sweet, latte. For the cold foam, just froth it up. Pour this bad boy right on top and now you have made yourself the perfect at home iced latte. It hits every single time.
