Save this one for Labor Day and send it to the friend who would absolutely crush this. 🍓 Balsamic Berry Caprese Chicken Serves 4 What You’ll Need: 4 organic boneless, skinless chicken breasts 3 tbsp balsamic vinegar 2 tbsp extra virgin olive oil Juice of 1 fresh lemon 1 tbsp honey 2 cloves garlic, minced 2 tsp Italian seasoning 1½ tsp kosher salt ½ tsp black pepper 1 cup strawberries, quartered ¾ cup blueberries 1 cup cherry tomatoes, halved 6 oz fresh mozzarella pearls ¼ cup fresh basil, torn 1 tbsp extra virgin olive oil ½ cup prepared basil pesto Balsamic glaze, for finishing How to Make It: Whisk together the balsamic vinegar, olive oil, lemon juice, honey, garlic, Italian seasoning, salt, and pepper. Add the chicken and marinate for 20–30 minutes. Grill over medium-high heat for 5–6 minutes per side, or until nicely charred and cooked through.
