This is a crockpot dinner to be cooking all day while I work. I have two super large frozen chicken breasts. I decided to do three that might be way too much but oh well. I have three bell peppers. I'm gonna chop and throw in here. Two cans of Ro-Tel. Two blocks of cream cheese. One packet of taco seasoning. One packet of fajita seasoning. This thing is stuffed to the top. I'm gonna cook it on low until I get home, which is almost 4 o'clock. This has been cooking all day. I'm gonna pull this chicken out to shred. Pour it back in. Stir it. I'm gonna take some shredded cheese and pour it over the top. I'm gonna cover it and let it cook like 20 more minutes just until ready to eat. Simple. I have my plate of chips. I'm gonna put some of this on here. This is one of those meals that kind of looks like slop, but it's gonna end up being really good because it smells really good. Let's do diet Coke and lime. I probably should have drained the Ro-Tel because this is a little bit more liquidy than I would have preferred.
