£40 FREEZER FILL SERIES, Part 2 / Recipe 1: Tuscan Chicken Sausage Gnocchi. If you struggle to find it let me know 💖 Macros Calories 513 Protein 30g Fat 13g Carbs 61g Ingredients to make 4 portions: 340g chicken sausages 1 red pepper 1 brown onion 5 garlic cloves 10g butter 100g sundried tomatoes 50g tomato puree 1tbsp paprika 1tbsp dried herbs / oregano salt & pepper 1 chicken stock pot (300ml water) 40g creme fraiche 50g grana padano 25g mozzarella 2x handfuls of spinach 500g gnocchi Method: Air fry the chicken sausages until cooked through. I used HECK chicken sausages so I did 12 minutes at 200, turning half way. Slice into smaller pieces once cooked. Pan fry diced onion and pepper for a few minutes before adding the chopped garlic - fry for a further few minutes. Add sundried tomatoes, tomato puree, and salt, pepper, oregano and paprika. Pour in chicken stock, mix in the creme fraiche and half of the grana padano before adding the cooked sausages in. Add the spinach. Add the gnocchi to salted boiling water and cook for a couple of minutes or until all the gnocchi floats to the top of the pan. Drain, add to the sauce, sprinkle with mozzarella and the other half of the grana padano. Storage/reheating instructions: - Make sure you leave the meal preps to cool down before adding the lids and freezing and store in airtight containers. - Store in the freezer for up to 1 month for best quality. - To reheat, thaw the portion in the fridge overnight. Add a tablespoon of water or broth to the thawed prep, place in the microwave and cover. Cook in 1 minute intervals stirring throughout to avoid the gnocchi going mushy and cook until piping hot!
