While I loved Ina’s Chicken Stew with Biscuits when I made it during the first year of the project, for some reason I never revisited it …and that was a mistake! With six recipes across her repertoire, Ina really loves a pot pie. While the versions topped with store-bought puff pastry may be the easiest, this is a close second because you still get a homemade topping without having to make and roll out pastry dough. The stew is packed with chicken, carrots, peas and pearl onions, all coated in a thick, creamy and extra-chickeny gravy thanks to the addition of bouillon cubes. Instead of a traditional crust, it’s topped with rounds of parsley-flecked biscuit dough that bake directly on the stew. The tops become golden, puffy and flaky, while the bottoms soak up some of the gravy and take on the soft, comforting texture of chicken and dumplings. Truly the best of both worlds! I’ve seen people swap chives for the parsley in the biscuits, and given my feelings about parsley, I will absolutely be doing that next time. 📖: Family Style, page 90 #InaGarten #BarefootContessaRecipes #ChickenStew #ChickenAndBiscuits #FallComfortFood
