SIMPLY INA COUNTDOWN, DAY 7 | HOW EASY IS THAT? Ina Garten’s Mocha Chocolate Icebox Cake was my choice for celebrating my first birthday during the project, and it has probably become the most-requested of all her desserts. It also perfectly embodies the store-bought Is fine ethos as Ina uses pre-made thin, crisp chocolate chip cookies (Tate’s is her top choice). Those are layered with a mocha whipped cream flavored with Kahlúa and stabilized with mascarpone. As it chills overnight, the cookies absorb the cream and soften into cake-like layers. It’s cool, creamy and packed with flavor. Between the mascarpone, Kahlúa and Tate’s, it can get a little pricey, but the results are absolutely worth it. I increased the whipped cream ingredients to use both tubs of mascarpone, partly because I was using a 9-inch springform pan instead of an 8-inch, but mostly because it left me extra cream for dipping the leftover cookies. :) And don’t make the same mistake I did in the early years of the project: When the recipe said to chill overnight, I put it in the freezer instead of the refrigerator because it said ICEBOX. Hahaha. Thankfully, it was still delicious! 📖: How Easy is That, page 206 #InaGarten #BarefootContessaRecipes #IceboxCake #ChocolateDessert #CookbookCooking
