SIMPLY INA COUNTDOWN, DAY 10 | COOKING FOR JEFFREY When I began the project, if you were to ask me if I thought a recipe with fennel would be THE Ina Garten recipe I'd pick if I could only choose one, I would have thought you were crazy! But Rigatoni with Sausage and Fennel is probably my most-made Ina dish and the one I most often cite as my all-time favorite. Someone once called it "adult Hamburger Helper" (a compliment meant in the best way possible), and I couldn't agree more. If you, like me, were put off by being told fennel has an anise flavor, don't worry. Once cooked, its anise flavor is subtle and hardly noticeable. Instead, it adds a delightful depth to the dish without overwhelming the other flavors. The fennel is cooked down with onions, then sweet Italian sausage is added, along with ground fennel seeds and red pepper flakes, followed by a bit of white wine, heavy cream, and tomato paste. After simmering to meld the flavors, the sauce is tossed with rigatoni, Parmesan cheese, and parsley.
