EASY ASIAN CUCUMBER SALAD 🥒 So simple, so flavorful, SO crispy. This is one of those salads I could seriously eat once a week. It’s fresh, crunchy, a little sweet, a little spicy, and gets even better the longer it sits in the dressing. Ingredients: • 6 mini cucumbers • Salt - 2 tablespoons Dressing: • 1 tbsp minced garlic • 2 tbsp soy sauce • 1 tbsp rice vinegar • 1 tbsp sugar • ½ tbsp chili crunch oil • 1 tsp sesame oil • ½ tbsp sesame seeds Directions: Slice your cucumbers into bite-sized coins and add them to a bowl. Sprinkle generously with salt, toss, and let them sit for about 20 minutes. *The salt draws out excess water from the cucumbers, which keeps them extra crisp and prevents all that water from diluting your dressing* After 20 minutes, rinse the cucumbers really well with cold water to remove the excess salt. Pat dry. Mix together the garlic, soy sauce, rice vinegar, sugar, chili crunch oil, sesame oil, and sesame seeds. Pour over the cucumbers and toss until completely coated. You can eat it right away, but the longer it sits and soaks up that dressing, the better it gets. 🥒🔥 #cucumbersalad #asiancucumbersalad #EasyRecipes #healthyrecipes #saladrecipe
