ONE-POT LOADED POTATO SOUP🥔🥓🧀 A fall classic made in ONE pot, in under 30 minutes, with simple ingredients and enough to feed a crowd. This makes a big batch—I actually froze half for one of those days I don’t feel like cooking. 🙌🏼 Ingredients • 1 lb bacon, chopped • 2 tbsp butter • 1 white onion, diced • 3–4 cloves garlic, minced • ¼ cup flour • 2 cups milk • 1½ cups heavy cream • 32 oz chicken broth • 2lbs Yukon gold potatoes, peeled & diced (about 6 cups) • 2–3 cups freshly shredded cheese—I used sharp cheddar + Gouda • Salt, pepper, paprika, chicken bouillon, garlic powder & onion powder, to taste • Cajun seasoning, optional if you’re feeling zesty 🌶️ For topping: bacon, shredded cheese, sour cream, green onions, jalapeños—whatever you like! Directions 1. Add the chopped bacon to a large pot and cook until crispy and the fat has rendered. Transfer the bacon to a paper towel-lined plate. Remove about half of the bacon grease, leaving the rest in the pot because no one said this soup was healthy…and fat = flavor. 😂 2. Add butter, onion and garlic. Sauté for 2–3 minutes until fragrant and softened. 3. Sprinkle in the flour and stir well. Cook for 3–4 minutes to cook out the raw flour taste. 4. Slowly stir in the milk, heavy cream and chicken broth. Season to taste with salt, pepper, paprika, chicken bouillon, garlic powder, onion powder and Cajun seasoning if you’re feeling zesty. 5. Add the diced potatoes and bring everything to a boil, then reduce the heat to a simmer. Simmer for about 15 minutes, or until the potatoes are fork-tender. 6. Add the crispy bacon back in, reserving some for topping. Lightly mash some of the potatoes directly in the pot to naturally thicken the soup, but don’t go crazy—you still want plenty of chunky potatoes! 7. Turn the heat to low and immediately stir in 2–3 cups of shredded cheese until completely melted and creamy. Freshly shredded cheese melts best, but use what works for you! Serve hot and load it up with extra cheese, bacon, sour cream, green onions, jalapeños or all of the above. 🥔🥓🧀 Save this one for soup season! 🍂 #soupsea
