Two of my friends welcomed their babies last week, so I put together a mini postpartum meal package for them because sometimes love looks like warm food waiting in your fridge. On the menu: - Goat meat pepper soup - Rich beef stew - Homemade lactation granola - Greek yogurt There's something so special about feeding new mums. Between the sleepless nights and learning their new little humans, I hope these meals give them one less thing to worry about. Food is one I made was this super nutritious lactation granola, it had a bit of everything inside. The first thing I made was this super nutritious lactation granola, it had a bit of everything inside. I added a bit of oats, some nuts, some flax seeds, some sunflower seeds, some pumpkin seeds, some chia seeds, some almonds, and I just mixed all of that together. I popped it in the oven to give it a nice toast. While that was doing its thing, I went ahead to make the wet base for this granola. I'll be using some honey, some coconut oil, and some peanut butter, and a little bit of cocoa powder. I used my immersion blender to give this a really good mix and I was done. By the time I was done, the first set of granola was well toasted, so I just poured that into a bowl to cool down. I went in with the second set. Then I went ahead to start some yogurt for them as well. I just mixed that, let it cool down. I had already put in the starter. Then I covered and set it aside for fermentation. And finally, it was time to start cooking. I just went ahead to blend everything that I'll be needing for this good meat pepper soup because I needed it to come out correct. Blended this to a smooth paste and then I just poured it into the goat meat. I went ahead to season it with some seasoning powder and some fresh oregano. I put that on fire to cook. The beef stew that I'll be using for the beef stew was already precooked, so I just sieved that out of the stock, put that on my baking tray and popped that into my air fryer. Then I proceeded to blend up the pepper mix that I'll be using for the stew. I got started on the vegetable soup. I added on the vegetables, some smoked fish, and some smoked mackerel. I just kept this minimal, some pure honey. And finally, everything was ready. So I just went ahead to pack everything up into bowls so I can just allow it to cool before freezing them. I am just so happy and grateful that I can do this for them, and I just hope that this helps in the little way that it can. This was such an amazing cook for me. I really enjoyed myself. Thank you.
