I started a meal prep business to help my customers with dinner fatigue. But it turns out I also made my personal meal prep a lot easier. because I just have whatever my customers are having for that week. Every week, I choose a variety of five different dishes for the menu. On the menu this week, I have spicy meatball spaghetti. red red beans with fried plantain. hot honey salmon with mash. fried rice with peppered chicken, and peanut soup with rice balls. Usually I will start on the most difficult dishes first. And this week is actually the peanut soup. Peanut soup is not necessarily that difficult to make, but it's a soup. So I can literally just put everything together and forget about it to the side. And while that's cooking, I can start on the quicker dishes. Made and plated, the spicy meatball spaghetti. And then I started on the red red beans. It looks so delicious. The only thing missing on this plate is some gari. Or is that just me or does everyone else have red red beans with gari? I'm not even gonna lie to you. One of the dishes that I was most excited about this week was this hot honey salmon. Saw this dish on a restaurant menu and I didn't order it. I knew that I wanted to make it for the week's meal prep. This barely takes any time to make, but it is so perfect for meal preps. One of the things that I started doing to save myself time is literally to just plate everything up once it's done. That helps me stay organized but also makes the food cool down quicker, which is perfect because I can literally just pack everything quickly. chill them before shipping them to my customer. Honestly, I think that meal prepping is the only answer to dinner fatigue. It's exhausting doing all that work in one day, but it's so rewarding when you don't have to think about what you're gonna eat for dinner all week.
