Happy Sunday everyone! As Millie had some friends over yesterday, I thought chicken nuggets would be a winner… and I was right! These went down an absolute treat. What the kids didn’t realise is that they’re actually pretty healthy too. I really like this recipe because you get that extra bit of flavour from adding the mayonnaise and mustard into the dip. And it sounds silly, but it’s also one less dip! Usually you would dip the chicken into the flour and egg first and then into the breadcrumbs, but I love that this is all combined into one. Here’s how to make them: 600g chicken breast 2 tbsp mayonnaise 2 tbsp Dijon mustard 2 tbsp plain flour 2 eggs 180g pack of panko breadcrumbs (I actually had some left over, so you could definitely use less). 1. If you like your panko breadcrumbs nice and golden, roast them in the oven first. I did mine for around 10 minutes at 180°C, giving them a mix halfway through. 2. Mix together the mayonnaise, Dijon mustard, flour and eggs. 3. Chop the chicken into chunks, dip each piece into the mixture and then coat in the golden panko breadcrumbs. Place onto a baking tray. 4. Cook at 200°C for around 15 minutes, or until the chicken is cooked through. Give this one a try, guys!
