welcome to my first episode of my soup and sourdough series. Each Sunday I will be pairing a homemade soup with a sourdough bread bowl to match. This week we're making a roasted garlic and Parmesan paired with a spicy sausage tortellini soup for the sourdough, I mixed it together yesterday and added the inclusion. Let it cold proof. Took it out of the fridge this morning, baked it. I wish you guys could have smelled this. Smelling incredible. Inclusions were roasted garlic and Parmesan. I roasted the garlic in the oven for about 40 minutes and shredded fresh Parmesan. To get started on the soup, I'm adding oil and butter, finely chopped carrots, celery, and onion. Let these cook over medium heat while they soften. Adding lots of Italian seasoning, pepper, salt, and red pepper flakes. Mixing that around. And adding two to three garlic cloves. Making this soup spicy is completely optional. I'm using hot Italian sausage. You are more than welcome to just use regular sausage. Mixing that around until it is fully cooked. And then adding our flour. I mix this flour around for about one to two minutes. I'm adding in my liquids, crushed tomatoes, adding all that in, mixing it up and letting it come to a boil. Once that does start boiling, I add in my tortellini. Now tortellini is very, very quick to cook. Mine took only about five minutes. You can tell when they start floating to the top. Once those are fully cooked, I add in my heavy cream and spinach. And to top off the soup, we're adding on some freshly grated Parmesan cheese. For the best part is putting the soup into the bread bowl. To me, having fresh bread with soup is just as important as having the and this bread bowl is so crispy on the outside and so soft on the inside. This combo was incredible. I have so many more ideas.
