the 15-minute tom yum udon I make after my 9-5 🍤 creamy, spicy, sour, and it all happens in one claypot. full recipe below + on my Substack (link in bio) Creamy Tom Yum Claypot Udon (serves 2-3) 🥣 4 cups chicken stock 🌶️ 3 tbsp tom yum paste 🐟 1 tbsp CHIN-SU Fish Sauce, plus more to taste 🔥 1 tbsp CHIN-SU Hot Sauce 🥄 1 tsp sugar 🥛 1/2 cup evaporated milk 🍤 10-12 frozen shrimp, peeled and deveined 🍜 2 packs frozen udon 🍄 4 oz oyster or enoki mushrooms 🍅 1 roma tomato, cut into wedges 🧅 1/2 small onion, cut into wedges 🍋 2-3 tbsp fresh lime juice (about 2 limes) 🌿 chopped cilantro 1. Bring the stock to a simmer in your claypot or nabe over medium heat. 2. Stir in the tom yum paste until fully dissolved, then add the CHIN-SU Fish Sauce, CHIN-SU Hot Sauce, sugar, and evaporated milk. The broth turns a creamy red-orange. 3. Add the frozen udon, onion, tomato, mushrooms, and shrimp. Cover and cook until the udon loosens and the shrimp are just done. 4. Turn off the heat, then stir in the lime juice (always off heat so the milk doesn't curdle and the lime stays bright). Taste and adjust — sour first, then salty, then heat. 5.
