one-pot gochujang rose udon with pancetta - no boiling water needed 🍝🌹 full recipe with more detailed instructions is linked in my bio on my substack! the frozen udon goes straight in the pan with everything else, lid on, seven minutes. this makes two — i halved it and made one bowl for myself. 🥓 4 oz pancetta, diced 🍜 2 blocks frozen udon, straight from the freezer 🥛 3/4 cup heavy cream 💧 1/2 cup water or unsalted chicken broth 🌶️ 1 1/2 tbsp gochujang 🍅 1 tbsp tomato paste 🌶️ 1 tsp gochugaru 🥢 1 tbsp soy sauce 🍯 2 tsp honey 🧄 4 cloves garlic, grated 🫑 1/2 tsp black pepper 🧀 1/3 cup grated parmesan 🌱 2 scallions, sliced 🥚 2 egg yolks 1. cook the pancetta in a dry pan over medium 6-8 min until crisp. take it out, leave all the fat. 2. lay the frozen udon blocks flat in the pan. garlic, gochujang, tomato paste, gochugaru, soy sauce, honey and pepper go on top. pour the cream and water around the noodles. 3. lid on, medium heat, 7 minutes. don’t lift it. 4. open it up, pry the blocks apart with tongs, toss until the sauce turns pink and even. 5. uncovered 2-3 min, tossing, until it clings to the noodles. 6. off the heat, toss in the parmesan until it melts in. 7. add the pancetta back, toss once. 8. bowl it, top with scallions, a raw egg yolk, more parmesan. break the yolk in at the table. #roseudon #gochujang #onepanmeal #udon #weeknightdinner
