korean bbq beef meal prep — 🔥 4 days of lunches, about 25 minutes of actual work. i used @Prepara Kitchenware latchlock click containers which helps my meals last long in the fridge ⭐️ Ingredients: 🥩 1 lb shabu-style beef slices 🌶 2 tsp gochujang 🥢 2 tbsp soy sauce 🍯 1.5 tbsp honey 🧄 3 garlic cloves, grated 🫚 1.5 tsp grated ginger 🧴 2 tsp toasted sesame oil 🧅 3 tbsp grated onion 🥒 2 Persian cucumbers, sliced thin 🍶 ⅓ cup rice vinegar + 3 tbsp water 🍯 1 tbsp sugar 🧂 ¾ tsp salt 🍚 2¼ cups cooked short-grain rice 🧅 scallion greens + sesame seeds Steps: 1. Pickle first: warm vinegar, water, sugar, and salt until dissolved, pour over cucumbers + 1 sliced garlic clove, fridge at least 1 hour 2. Whisk marinade, toss with beef, 15-20 min only — thin slices go mushy if they sit longer 3. Preheat your pan 3-4 full minutes on high, then cook in small batches: single layer, don't touch for 45-60 seconds until the edges caramelize, flip once 4. Reduce leftover marinade into a glaze and toss the beef through 5.
