Save this for when you feel like trying something new! Ragi Rotti (Finger Millet Flatbread) full recipe ⬇️ A traditional recipe from Karnataka. Ragi is exceptionally rich in calcium and was often eating by farming communities as it was cheap, grew in tough conditions and released sustained energy for a full day of working on the fields. Ingredients 2 cups ragi flour (finger millet flour) 1 tbsp cumin seeds 1/2 small onion, finely chopped 1/4 cup grated carrot 1–2 green chillies, finely chopped (skip if you prefer less spice) Handful coriander leaves, finely chopped Handful dill leaves, finely chopped (adds beautiful flavour) 1 inch ginger, finely chopped 10–12 curry leaves, finely chopped Salt to taste 1 tbsp oil (helps with mixing and digestion) Water, as needed Ghee for frying Banana leaves or butter paper Method Take the ragi flour in a wide mixing bowl. Add the cumin seeds, onion, carrot, green chillies, coriander leaves, dill leaves, ginger, curry leaves, and salt. Dry mix everything first. Then add the oil and mix again. Now slowly add water bit by bit to form a soft dough as shown in the video. Don’t add all the water at once. The dough should feel soft and moist ..not hard and not watery. Cover with a cloth and let it rest for at least 15 minutes. Then take a handful of dough and place it in the centre of a banana leaf or butter paper. Pat it gently with your fingers until the edges are even, as shown in the video. If the dough sticks, lightly moisten your fingers with water from a small bowl nearby. Carefully transfer the rotti onto a hot pan. Drizzle ghee around the edges and cook on medium heat until crisp and golden on one side, then flip and cook the other side as well. Serve hot with chutney or podi mixed with yoghurt. Note: Avoid using the thick stem part of the banana leaf as it may crack while patting the rotti, especially if you’re new to using banana leaves.
