Colocasia leaves * grow almost like weeds in coastal Karnataka during monsoon season, and somehow people found a way to turn them into something this delicious dish called “pathrode” The leaves are coated with a batter made with Byadagi chillies, rice, tamarind and spices, then lovingly rolled, steamed and sliced. I genuinely think these traditional cooking techniques are incredible… taking an ingredient growing everywhere around you and transforming it into a dish packed with so much flavor, comfort & HEALTH BENEFITS.. RECIPE coming soon.. *Colocasia leaves are also called harive/ patrode leaves. Black stem variety is preferred. Proper cooking instructions help to minimise itchiness.
