Full recipe 👇🏼 Amma’s Rava Rotti ( Semolina Rotti) A recipe from coastal Karnataka that is light, earthy and full of plant fibre! You just need a bit of oil or ghee for frying but you can reduce this if you prefer it even lighter. For protein, you can have boiled sprouts on the side. ❤️ Ingredients * 2 cups coarse semolina * ½ small onion, finely chopped * ¼ carrot, finely chopped * 1 inch ginger, finely chopped * 1–2 green chillies, finely chopped ( skip this if prefer low spice) * 10–13 curry leaves, finely chopped * Handful coriander leaves, finely chopped * Handful dill leaves, or methi leaves, finely chopped * Salt, to taste * ¼ cup grated coconut (optional) * Ghee, for frying * Banana leaves or baking paper Method 1. In a wide bowl, combine the coarse semolina, onion, carrot, ginger, green chillies, curry leaves, coriander, dill, coconut, and salt. 2. Mix everything together dry first. 3. Slowly add water, little by little, until you get a soft dough. The dough needs to be soft, moist but not watery. Check the video for the perfect consistency. (Don’t pour all the water at once.) 4. Cover and let the dough rest for at least 15 minutes. More if you have time. Taste it and adjust salt if needed. 5. Take a handful of dough and place it in the centre of a banana leaf or parchment paper. 6. Moisten hands. Pat gently with your fingers until evenly flattened, as shown in the video. (Moisten your hands with water to make this easier.) 7. Heat a tawa or cast iron pan on medium heat and grease lightly with ghee or oil. 8. Place it onto the pan along with the leaf/paper side facing up. ( read tips below) 9. After 2–3 minutes, the leaf/paper should peel away easily. 10. Flip, drizzle a little more ghee, and cook until lightly golden. ✨ Don’t overcook, -it should stay crisp outside while remaining soft inside. Serve hot with chutney or podi.
